How To Make Wine At Home

Making wine at home is not difficult, and it is a very rewarding hobby. In this article, we will go through the equipment needed and all the steps you take to make wine from fruit - grapes, apples, plums, pears, peaches, or whatever fruit you have.

You can also make wine at home from a kit, usually using grape concentrate, but the results are very variable, and it is much more satisfying to make wine from fresh fruit.

Apples

You probably thought of home wine making because you have your own fruit, or have been given some, or because fruit is in season in your area and you can get it very cheaply. Making wine is a great way of using fruit when you cannot possibly eat it all, or make all of it into jam, or freeze it all.

I have made wine successfully from many kinds of fruit, including grapes, apples, apricots, plums (many varieties), quinces, pears and peaches. Make sure you discard all rotten or suspect fruit right at the start.

Assuming you have your fruit ready, here are the equipment and supplies you need.

With this all collected, follow these steps to make your wine.

Get your juice

People starting out with home fruit wine making often wonder how much fruit they actually need. Here is a tip I have found works - you need enough juice to fill the glass fermentation vessel you are using - your carboy or demijohn. Some recipes advocate watering your fruit juice to make up the quantity you need, but never do this. Use pure juice and your wine will be full-flavored and satisfying to drink.

You will either press the fruit, squeeze it by hand or use an electric juicer. If squeezing by hand (soft plums for example) you will need a large stainless steel or plastic container. If you have hard fruit like apples or hard plums, and electric juicer is a good investment if you don't own one already. You can also cut up the fruit and boil it in a little water to extract the juice, but this degrades the flavor of the final wine. If you have grapes, you can try trampling them with your feet in the traditional manner. Some fruits can be cut up and left to soak for a few days in a little water to extract the flavor and color from the skin.

Some fruit, like apples, throw a tremendous froth after juicing and you will have to siphon the juice out after the froth has risen to the top.

Note that mixed fruit wines are very successful. If you have only a few apricots but a lot of apples, mix the juice to make up your gallon.

Add the sugar

Some fruit juice, like very sweet grape juice, will not need the addition of any sugar. Most other fruit wines will need sugar to be added. I normally add 2 pound of sugar to make up one gallon of fruit juice. If you prefer a drier wine, you can reduce this amount. This is the reason it is better to use several smaller glass vessels when starting with home fruit wine making - you can vary the amount of sugar in each (record this by writing on the carboy with a felt pen); when you eventually come to drink the wines, you will know which style between dry, medium and sweet that you prefer. More sugar also means more food for the yeast, and so more alcoholic wine at the end of the process.

Add the sugar by warming the fruit juice slightly in a stainless steel pan, and stirring in the sugar to dissolve it.

Add the yeast

Sterilize your carboy or demijohn with sterilizing solution, or boiling water. Put the sugared fruit juice into your vessel. Dissolve the powdered yeast in a little warm water and sugar in a cup, and leave it for a few minutes to activate. Then add the yeast to the fruit juice. Put your air lock on the vessel.

Fermentation of the fruit juice should begin soon, and you will see bubbles in the air lock. This means the yeast is converting the sugar to alcohol.

Watch and wait

Put your fermentation vessel in a warm place if possible. Ideally you should leave the wine fermenting for nine months to a year. If you drink it after only a month or two it will taste rough and poor; leaving it for about a year will let it mellow out - this really makes a difference. As fermentation goes on, you will notice a white layer appear at the bottom of the fermentation vessel. This is formed by dead yeast cells. You can 'rack', or siphon the wine into a new vessel, which stops the wine becoming tainted with a yeasty aftertaste. You should do this once a month.

Bottle your wine

If the wine has not clarified, and you want it to be fully clear before bottling, leave the vessel in a very cold place for a week or so, and the clarity should improve.

When the fermentation has stopped (no bubbles coming through the air lock) you can bottle the wine and cork the bottle. Remember to sterilize the bottles and corks before you use them. If you will be making a lot of wine, remember to label all the bottles with details of the fruit, the yeast variety used and date of bottling. If you make a superb batch, you can then try to replicate it in following years.

Drink up!

Few people can resist drinking a bottle at this stage. But most fruit wines are at their best up to two years after bottling, so you can put a few bottles aside until you have some friends round, or have something to celebrate. Easy Apples and Brie Appetizer

If you are going to a party and responsible for bringing the appetizer, this apples and brie appetizer is always a hit. Easy to make ahead, just pop it in the oven right before serving. My mouth waters even when I'm writing down the ingredients!

What you'll need:

Apples

- 1/2 stick of butter (melted)

- 1 loaf French bread (sliced into 1/2 inch slices)

- 2-3 green apples (Granny Smith apples work well)

- 1/2 cup brown sugar (firmly packed)

- 1/3 cup walnuts (chopped) or use pecans

- small round of Brie cheese (12 or 14 oz.)

First, preheat your oven to 350 degrees F. Toast the french bread on a baking sheet until the slices turn golden. Make sure you don't forget and over toast!

Next, remove the rind from the Brie cheese and discard it. Slice the Brie into 1/4 inch thick slices. Then cut your apples into nice, thin slices. Mix the walnuts, brown sugar and melted butter and set aside.

Next, put a slice of cheese on each of the toasted french bread pieces and top with an apple slice. Spoon a little of the walnut mixture on the top of the apple slice. After preparing all the french bread slices, place the baking sheet back into the oven, or store until ready to use.

Bake the Apples and Brie appetizer until the cheese melts. But PLEASE watch the cheese so it doesn't burn. You will love this tasty and simple appetizer!

Because we live close to the Rocky Mountain foothills and the altitude is so high in Calgary, we have to adapt our gardening habits. Backyard green houses are very common or garden frames. I can get a head start on my gardening if I start my plants in the house in early spring or buy young plants at the end of May.

This last March I was very impatient. I wanted spring to come and decided to help it along by starting my plants, in the house, way too early. By the end of April the dahlias were already two feet tall and my oriental lilies were already blooming on my kitchen table. When I finally set my dahlias out they blossomed beautifully all summer and even now are displaying huge saucer size colorful blooms. But my oriental lilies died off within a week leaving the green stems to remind me of my impatience.

One spring I was fascinated by the scarlet flowered beans that grow to the top of the fence. I started some on my window sill. They sprouted so quickly and their tendrils curled all over my chairs and TV trays in the dining room window. By May the snow was gone and the sun was shining brightly. When I got up in the morning it was at least 10 degrees centigrade. The bean tendrils were already three feet long and I knew I was trying my husband's patience with my inside garden.

Then and there I decided I too had had enough of these plants invading on my dinner plate so next morning out they went. I knew better. I know you're supposed to harden your plants off before you plant them outdoors but it's such a tedious procedure. First you set the plant out on the patio in the sun for a very short time and then take it in. The next day you put it out longer and every day a little longer until it gets used to the outdoor coolness and atmosphere. Then you can finally plant it. Even then you may have to cover it on cool nights and cooler days. I had lots of writing to do and decided to just plant them against the fence. For a couple of days I had beautiful green bean plants running up my poles but slowly most of them just shriveled up and slowly died.

This hard, time consuming work of tending vegetables and flowers makes me think of the fruit of the Holy Spirit in our lives. We try different tactics to sprout and grow them ourselves our lives. We even have some success.

Just like my plants that did so well in my warm sunny kitchen we can display symptoms of the fruit of the Holy Spirit as long as we practice them in a controlled environment. It's easy to show love to others and be patient with people as long as everything is peaceful and we are in control. But then things start going wrong. We get super busy and run out of time. We get frustrated and go back to our old habits of blaming others for my problems.

Sometimes we try so hard and it seems no matter how many different tactics we try, no fruit appears. That reminds me of the Lily of the Valley roots I purchased and not one of them grew. Even my young Peony plant was stunted in its growth. This time I knew I wasn't too blame for failure. I had to look further and realized I had bought these roots on sale at a hardware store. They just weren't healthy roots. I promised my self to buy all of my roots and bulbs at the renowned garden centre next year.

At times we too forget the source of the fruit of the Holy Spirit in our lives. We even attempt to grow these fruits of love, joy, peace, patience, kindness, goodness, faithfulness, gentleness and self-control relying on our own strength. Or just like my young tender plants that I set out too early and a touch of frost kills them; outside influences overcome our good inclinations.

Only the Holy Spirit can grow the fruits of the Holy Spirit in our lives. We need to be close to God, spending time with Him in prayer and reading His Word and obeying Him as He leads us. It's only yielding to Him that brings godly fruit into our lives.

Well, I have news for you. God doesn't even want you to try to be these things all by yourself in your own strength. He wants to grow these characteristics in you. He does that when you spend time with Him.

Just like you are influenced by other kids when you spend time with them and become kind of like them, you are influenced by God when you spend time with Him and become like Him.

You can spend time with God by reading the Bible and listening to what He wants to say to you. You also spend time with Him when you pray to Him or when you go to a Bible Study or Prayer time at church with your friends. The more time you spend with God the more fruit the Holy Spirit produces in your life if you let Him.

Jesus says He is like a vine to us and we are like the branches of that vine. The branches get life from the vine so we bear fruit that the vine bears. We are blessed to be chosen by the God of the universe to be in such a close relationship with Him.

Controlling Seborrheic Dermatitis

For roughly three years now, I've suffered from what my dermatologist refers to as, "seborrheic dermatitis". Some people who have this type of dermatitis get relief from many of the products or shampoo's available...but for another class of people such as myself, finding relief can be elusive if not impossible.

Some of the shampoos I've tried that were recommended, are the shampoos from Neutrogena. I've had some success from the coal tar shampoo and the T/Sal product. Another shampoo brand is called Nizoral and touts the ingredient, ketoconazole. I was able to determine that the only way that any of these shampoos were effective for myself, was to be sure and allow the shampoo to stay on the scalp for awhile. I also rotate between three or four different types of shampoo. This seems to help more than just using one exclusively.

I wish I could tell you there is a definitive "cure" for seborrheic dermatitis, but there isn't. The actual cause remains a mystery to doctors and researchers. With no known cure, the best you can do is to try and "control" the symptoms. Personally, I've had extremely limited success with most of the products I've tried or been prescribed, and that success usually only lasts perhaps a week?

Not trying to be totally discouraging...but the facts are what they are...some of us just haven't been able to find the relief we're looking for. Does that mean you should just give up and give in? Absolutely not! First of all, research is ongoing and there are new products being developed, so the one that helps you may be available in the not so distant future.

If you haven't tried them, you may also want to try some homeopathic treatments. These are typically all natural/herbal type treatments which may provide relief. Some examples are, topical zinc, apple cider vinegar, various B vitamins. A search of Google is likely to produce a lot of additional results.

And I hesitate to offer this as the last glimmer of hope, because quite frankly, it may be something that should be checked out in the beginning. Research has shown that "stress" has a lot to do with dermatitis outbreaks. Think about it for a minute...even though you may have SD all the time, do you find that it can be better or worse at certain times? Can you relate the beginning of your condition to a time in your life when something pretty drastic changed? "Skin Deep" is a great book by Dr. Ted Grossbart, which discusses the mind/body connection as it relates to your skin. Dr. Grossbart discusses how our emotions and feelings can be reflected through our skin.

Think about this...what happens when you get embarrassed? Your skin flushes and turns red. What happens when you get scared? Your skin will get "goosebumps". It's certainly not beyond the realm of possibility to believe that you may have other feelings and emotions that are being "played out" through your skin?

If you feel like you'll never find something to help your seborrheic dermatitis, don't give up hope! We all get discouraged at times, and that's probably the worst thing we can do. Take time out of your day to close your eyes, take a few deep breaths and just relax. This may not make your SD go away, but it certainly won't hurt and will most likely make you feel better about yourself which is a step in the right direction!

Green Smoothie for Diabetics

  • 2 cups water
  • 2-3 cups lightly packed baby spinach leaves (preferably organic)

  • 1/4 tsp cardamom
  • 1-2 tbsp chia seeds (soak in 2 cups water for a while)

TIP: Chia seeds are high in fiber, calcium, protein, antioxidants and omega-3. You can buy them at health stores.

Apple Crumble Recipe - Easy Apple Crumble Pie

What is more down home than a freshly baked apple pie? Not much, I tell you. This apple crumble dessert recipe is an easy-to-make variation of the popular two crust apple pie. What makes this an easy apple pie recipe is that you only use one crust (which you don't even have make), and the filling and topping will only take a few minutes to put together.

1 Ready made frozen pie crust

Apple

Filling

6 - 7 tart apples

1/2 cup sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

Apple Crumble Topping

3/4 cup flour

1/2 cup sugar

1/2 cup butter, firm texture

Directions

Preheat oven to 450 degrees.

First of all, don't peel the apples. Core and cut apples into 1/2-inch thick slices. Place apple slices into the pie crust.

In a small bowl, mix together the sugar, cinnamon and nutmeg. Sprinkle this spice mixture over the apples.

Bake 30 to 40 minutes until edge of pie is golden brown and the apples are nice and tender. Keep in mind when serving - this pie will have a loose texture and not be firm like regular apple pie.

Apple Square Recipe: Fresh Apple Cake Recipe

This delicious apple dessert recipe is another great way to use fresh apples and will fill your kitchen up with a wonderful homemade aroma. This cinnamon apple recipe is also filled with raisins and pecans for a wonderful crunch and munch flavor experience in every bite.

1 cup all purpose flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon nutmeg

2/3 cup milk

1 egg

1/2 cup raisins

3 cups fresh apple, peeled and sliced

1/2 cup chopped pecans

1/3 cup sugar

1 teaspoon cinnamon

Directions

Preheat oven to 350 degrees.

Grease a 13x9-inch baking pan.

With a spoon, lightly put flour into a measuring cup and level off the top with a knife.

In a large bowl, add the flour, 1/2 cup of sugar, baking powder, salt and nutmeg; mix thoroughly. Add in the milk and egg; blend well.

Spread mixture into the greased baking pan. Sprinkle raisins, apples and pecans evenly over the top of the batter.

In a small bowl, mix together 1/3 cup sugar and the cinnamon. Sprinkle over the top of the cake. Bake for 30 - 40 minutes until edges are a light golden brown and the apples are nice and tender.

Well like most people I had put a little weight on over the winter and decided to try and take a bit off. I only needed to lose about 10 pounds or so to get to my normal weight so as silly as it seemed I decided to give the 3 day tuna fish diet a try. We have always had problems with fruit flies, with one of the main reasons being that we live in an apartment and by law - must recycle. Because of where we live, we have to keep our recycling containers inside until they can be disposed of once a week. We all know that removing the food, getting rid of the garbage & cleaning up plays a big role, but we also know what it's like to move a piece of fruit and have a swarm of fruit flies fill the air only to escape your attempts at killing them. Where are they gonna go? Obviously the ones flying around can't be easily captured or killed, so they'll linger about until they find some other place to lay eggs and the whole cycle starts again.

In all my attempts, I found the best way to capture and remove the ones that escape is to create a simple trap using a jar, plastic wrap and a piece of food. Here's how it works:

1. Get a small jar you don't plan on using again ( like a baby food jar or something similar ) and wash it out well. Make sure it is not a jar with a funky smell such as a used pickle jar or anything that use to have strong spices. You want a clean, odorless jar.

2. Take a chunk of banana and place inside the jar. This is why you want a clean, odorless jar - so that the banana smell won't be overpowered by other not-so-tempting smells. Banana seems to work the best, but you can experiment.

3. Fit a piece of plastic wrap over the top of the jar, making sure that it fits tight and well sealed around the edges. Then take a pen or pencil and poke 4 to 5 holes in the plastic, just big enough for a fruit fly to fit into. Once a fruit fly crawls in, it can't get out. You would think they would just fly back out through the holes, but they won't!

4. Place the jar in an area where you have seen the most fruit flies. Depending on the amount of fruit flies you have, you can expect to start seeing the jar fill up within just a few hours. After 24 hours, you will discover just how bad your fruit fly problem is!

This simple, inexpensive & safe method works perfectly and if you don't want the jar on public display, you can always slip it behind the garbage can, in the cupboard or even under the sink (Just don't forget about it!). You will want to empty the jar every 3-4 days before any eggs have a chance to hatch. While adult fruit flies can't easily escape through the holes, their maggots can very easily, and besides that - they are disgusting to see crawling around in the jar. You don't want to see these things crawling on your counter!

Cleaning out the jar shouldn't be a problem. If you have a kind heart, you can choose to let them go outside. Personally, I spray the little buggers with bug spray, wash out the jar and start the whole process over again if I think there are still some fruit flies left to capture.

For bad fruit fly problems, you will want to use this method for a good two weeks to make sure you've captured the majority of fruit flies. You might even want to use a few jars in different places. Before long, your kitchen will be back to normal.
